Cake Review

Because I promised to tell [info]deathpixie how the margarita cake came out and I decided to tell everyone and be all proud.  I've never had something I made in the past go over that well before.  Everyone who tried some was raving about it and asking what was in it, and no one cared that it was a little sad looking.  It was too delicious.

One of these days, I'll try to make a cake by scratch but, really, I didn't have the time on Friday night and since I was trying something new anyway I was glad I stuck with the box.  I took a box of white cake and followed the instructions on the back except that instead of water I put in 12 ounces of frozen margarita mix and stirred that all up.

Then, I added 1/4 cup of tequila and 2 tablespoons of triple sec (I've never had this stuff before but YUM, I like triple sec) which got added to the mixture.  From there, again, just as normal - I poured it into two baking tins and cooked it for half an hour.  Once they were cooled, I frosted them with a butter cream frosting.

It turned out fantastic beyond belief.  The cake was nice and light, incredibly moist and fluffy.  The taste was citrus-y, almost like a lemon cake but not that strong at all and you could taste the alcohol but only lightly and it inhanced the flavor a lot.  It was like eating a margarita in cake form.

A++++ and I'm very proud of myself.  Next time, I might try a pina colada cake (pina colada mix and rum instead of tequila).  These also would do very well without the alcohol, which is good because it means I can make them for my mom.

Also cakes from scratch are really easy.

Oh, and you've had triple sec - at Nute's bday, in the margaritas with the tequila I got.

Will do! And oh my god, this in cupcake form? To diiiiieee. Seriously, out of an entire cake last night I had one slice left - which I just ate. :D

They're the next step for me but I'd wanted something simpler since I've never done one from scratch before.

Oohhh. We had triple sec in seltzer water the other night and *that* was nice and refreshing.

*laughs* I think you're right.

My favorite part about this cake was that it wasn't *too* sweet. Very light, nice and tart - refreshing, actually.
